How your cake is made

Two bakers, one oven for cakes, and a list on the wall.

Maren Halvorn bakes the sponges; Tobias Ek fills, finishes and pipes. We take as many cakes each day as the two of us can finish well, which is why some days are full. Your order goes on the list the minute you place it.

How much notice do you need?

Three days for a single-tier cake and ten days for tiered cakes; the calendar only offers dates we can meet. For something sooner, the counter usually has a 6-inch cake of the day.

Can you bake for allergies?

We bake gluten-free sponge on scrubbed benches, but our kitchen uses wheat flour, nuts and sesame every day, so we can't promise a cake free of traces. Every cake contains butter and eggs. Tick allergies in your order and we check them against the cake before you can place it.

Where do you deliver?

Minneapolis and St Paul, Wednesday to Saturday, for a flat $24. Tiered cakes are delivered and set up by one of us; single tiers travel boxed and chilled.

Can I change my order?

Up to the start of the lead time, yes: reply to your confirmation email or call. After that the sponge is already in the oven.
